Contrarytopopularbelief,thegreenpineappleisnotanunripefruit,butinfactavarietyofpineapplegrowninCostaRicathatmaintainsitsgreenhueevenafteritreachesripeness.Theouterskinisgreenbutwithin,thefleshiswhite,sweet,juicyandburstingwithnutrients. ThisisavarietyofpineapplethatoriginatesfromtheCaribbean:theCayennepineapple.Untilthe70s,thiswastheonlyvarietygrowninCostaRica,butthentheimportofpineapplesfromAfricasawtheyellowpineapplebecomewidespreadinEurope,andthementalassociationbetween“yellow”and“ripe”wouldsteerthepopulation’spreferencetowardsyellowpineapplesfromthenon.PineappleproductioninSouthandCentralAmericathereforerespondedaccordinglytomeetthisdemand. Nowthatinterestindietandnutritionisgrowingandthegeneralpopulationismoresophisticated,thegreenpineapplehasregaineditsplace.Ithasafresher,lighterflavourandaromathantheyellowvariety.Overall,theCaribbeangreenpineappleisadelicious,healthyfruit,typicalofthisgeographicarea. JustlikeotherNicofruttaproducts,thegreenpineapplefromCostaRicaisgrownwithminimumuseofpesticidesandchemicalfertilizers,withdueregardforbiodiversityandtheprinciplesoffairtrade,ascertifiedbytheFairtradeandBlueFlaglabels.
